Recipes:
Pancakes
- 1 1/2 cups Hillside Farms Organic Pancake & Baking Mix
- 1 ¼ cup of milk, or milk substitute
- 1 egg or egg substitute
- 1 1/2 tbsp. cooking oil, melted butter, or butter substitute
- Combine all ingredients, stirring until evenly mixed and moist. Pour about 1/4 cup of batter on hot griddle for each pancake. Cook until surface of pancake is bubbly. Turn pancake over and brown the other side. Makes about 9 pancakes.
- Serve.
Scones
- 2 1/2 cups Hillside Farms Organic Pancake & Baking Mix
- 6 tbsp cold butter, or butter substitute
- 1 egg or egg substitute
- 1/3 cup cold milk, or milk substitute
- 1/2 cup semi-sweet or flavored baking chips, dried fruit of chopped nuts
- Preheat over to 400F. Whisk together Organic Pancake & Baking Mix and cold butter, or butter substitute until crumbly. Fold in optional chips, dried fruit or nuts. In separate bowl, whisk together egg or egg substitute, and milk, or milk substitute, then add to dry mix until just moistened (over-mixing causes tough scones!). Pat dough into 8 inch circle or square and divide into equal pieces. Place on greased baking sheet or scone pan. Sprinkle with sugar if desired. Bake for 12-14 minutes, until lightly browned.
- Serve.
